To delete a canvas, open the navigation sidebar (you may need to tap 
in the toolbar), and do one of the following:
- Touch and hold the canvas you want to get rid of, and then tap Delete from the contextual menu:
- Swipe left on the canvas, and then tap Delete:
- At the bottom of the sidebar, tap Edit, tap to choose the canvas you want to remove, and then tap Delete.

OmniGraffle documents need at least one canvas; you cannot delete the last one.
